VOGUE
On one of Asmalımescit’s loveliest streets, on the roof of Ruz Hotels, Tone Istanbul brings the different tones of the day together under one roof — an all-day concept that runs from the first coffee of the morning into the late night. Doors open at 08:00 with breakfast, then lunch and dinner follow. After sunset, music and DJ sets carry the atmosphere into the evening. In short, Tone Istanbul is a meeting point you can drop into at different hours of the day.
Behind the project is a shared dream of four close friends. Ahmet Şahin and Çağrı Deliler shape the rooftop’s entertainment and music side, while Burak Kalkan and Mithat Korkut lead the breakfast and lunch experience. In the kitchen is Burak Kalkan, long-time instructor chef at MSA and former head chef at MSA Sia Eli. After years as assistant and instructor chef at the MSA restaurant, then head chef at Sia Eli and other consulting projects, he now brings that experience to Tone Istanbul.
Food and the bar also move with the music as the day unfolds. Upstairs, dishes arrive at the table; downstairs, DJ sets play every day except Monday. Sunset is one of the space’s best moments — when food, drinks, and music meet in the same atmosphere.
THREE FAVORITES FROM THE MENU
Smoked Labneh: Labneh, mascarpone, and Parmesan are smoked for three hours with cherry and apple wood chips. They’re finished with roasted beets and a confit-beet sauce folded with sour cherry and pomegranate.
Miso Eggplant: Eggplant marinated for four days in mirin, sesame oil, and soy, served with tahini and miso sauce.
Brisket & Corn: Beef brisket cooked in two stages over a total of 12 hours, served over a mix of charcoal-grilled corn, toasted couscous, Parmesan, mascarpone, and Emmental, finished with a kecap manis demi-glace.
IF YOU’RE ONLY HAVING ONE DISH — CHEF BURAK KALKAN’S PICK
If you choose just one plate, Chef Burak Kalkan recommends Brisket & Corn — a long cook that brings different textures together. If you like rich, characterful flavors, put it at the top of your list.
DECORATION NOTES
Tone Istanbul’s design mixes retro and modern details. Vintage speakers, records, hi-fi sets, an old television, and a typewriter line the wall shelving and give the room its character. Black and wood lead the palette, with leather and wooden chairs, green plants, and vintage lighting. Wrapped in glass, the rooftop fills with daylight by day and turns softer and warmer at night. Pieces from different eras give the space a nostalgic but current feel.
